Holoholo: 3 Ahi poke recipes

Freddie, who has shared his Oxtail Soup and Fish Patties recipes, was kind enough to share his proven Ahi Poke recipes.

Freddie:

Ahi is abundant this time of year due to spawning. Most Poke recipes start off the same, but vary depending on your taste. I would like to share the basic ingredients for making the base for what you want to enjoy.

Basic Ingredients:

  • One pound ahi filet cut into half inch cubes
  • Tablespoon of your favorite Sesame Oil
  • One or two tablespoons of Hawaiian Sea Salt (Paakai) depending on your taste
  • Teaspoon Chili Pepper Powder and or flakes. The Korean style Chili Powder adds color.

This will be the base for making a wide variety of different styles of Poke.

Shoyu Poke

Base mentioned above.

  • 1/8th cup Yamasa Shoyu
  • 3 Tablespoons Aloha Shoyu
  • Thumb size piece of ginger skinned and ground fine. Big chunks can be over powering. Leave bigger if you enjoy the ginger.
  • 1 cup finely sliced onion or and half cup chopped green onion
  • Teaspoon sugar. Honey can be substituted. Sugar is to cut salt from soy sauce. Not to be sweet. Mix everything together and let marinate for at least 30 minutes.

Ahi Limu

Base mentioned above.

  • 1/4 cup chopped ogo. Limu Kohu also works, but is harder to get.
  • 1 cup finely sliced onion and or 1/8th cup chopped green onion
  • 2 tablespoons Aloha Shoyu
  • Sesame Seeds as needed Mix and marinate for at least 15 minutes.

Other add ons include Inamona, Opihi, Garlic Chili Oil, etc

Spicy Ahi

Base mentioned above.

  • 1/4 cup Kewpie Mayonnaise. You can use Best Foods but watch salt content.
  • 1/8th cup Sriracha
  • Teaspoon Garlic Chili Oil
  • Teaspoon Gochujang Sauce
  • Three Tablespoons Masago AKA Flying Fish Roe Mix well and marinate for 15 minutes.

You can also add Imitation Crab and or Cucumber sliced thin half circles. Enjoy 😊

A good rule when cooking anything is to taste! Taste and adjust seasonings accordingly!
