Freddie is back to share his famous Fish Patty recipe. He previously shared his Easy Oxtail Soup recipe.
In the recipe below, he is using Ahi but any mild, semi-firm fish can be used. Ulua, Enenue, Ono, Mahi, even Kala or Pualu can be chunked and made into patties. Flavors can be added or omitted depending on preference.

Ingredients:
- About 2# Ahi, preferably fresh, cut into small chunks cubes. Almost like coarse ground beef.
- About two teaspoons garlic salt
- Teaspoon black pepper
- 3/4 bag of fine panko
- Two large Tablespoons Best Foods Mayo
- Half onion diced small
- One egg
- Celery and fresh shiitake mushrooms are optional, but I didn’t use because never have.
Mix well and form patties! You want the mixture to hold together like a burger or crab cake. The panko and egg helps to bind but also keeps patties moist. Mayo also helps bind and keeps patties moist.
Fry as you like. Crispy or not. I fried on medium heat with oil and a little butter, browned for flavor. Butter adds color and flavor.
Optional:
Drizzled with Unagi, sweet. Also Kewpie Mayo, savory! Furikake over with rice and we good!
Patties should be consistency of mashed potatoes when eaten. Soft and creamy almost with a little chew and that Ono tuna flavor. Enjoy!!!
